Skillet Strawberry Cobbler w/ Cream Cheese Biscuits

INGREDIENTS

    • 3 lbs fresh or frozen strawberries, halved or apples work also.
    • 1/3 cup brown sugar
    • 2 Tbsp fresh lemon juice
    • 2 tsp vanilla
    • pinch of sea salt

Biscuits

    • 3 cups all-purpose flour – or Gluten Free Baking Mix is what I used
    • 2 tsp baking powder
    • 1 1/2 sticks (12 tablespoons) cold salted butter,cubed ( I cut this to one stick and it was perfect).
    • 3/4 cup buttermilk (Add regular milk and lemon to make homemade buttermilk)
    • 1/4 cup honey
    • 8 oz cream cheese, cubed (use whipped if you want a more macro friendly option)

Directions

In the skillet, combine the strawberries, sugar, lemon juice, vanilla, and a pinch of sea salt. Toss well to combine.

In a large bowl, combine flour and baking powder, whisk. Add COLD butter pieces to the flour and mix until coarse little crumbles remain. Whisk together the buttermilk and honey and pour into the flour. Stir with a spoon until just combined, trying not to over mix. Use your hands if needed to bring the dough together. Fold in cream cheese. using hands, place roughly molded heaps of dough on top of the cobbler. Bake at 375 40-45 mins until biscuits are browned.
