Lilly Eats and Tells Sloppy Joes

INGREDIENTS

  • 1 Onion, diced
  • 1 red, yellow, or orange bell pepper
  • 1.5 lb ground turkey
  • 1.5 tsp kosher salt
  • 2 cloves garlic, minced
  • 1 tsp. liquid smoke
  • 2 tbsp tomato paste
  • 2 tbsp grainy Dijon mustard
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1/4 cup apple cider vinegar
  • 1 can (14.5 oz) tomato sauce
  • 1 tbsp brown sugar
  • Pinch of red pepper flakes

INSTRUCTIONS

  • Heat a large, heavy-bottom skillet over medium-high heat. Spray with a mist of olive oil. Add the onion and cook for two minutes, stirring occasionally.
  • Add the bell pepper and cook for two more minutes.
  • Push the veggies aside, add the turkey and salt. Let the turkey sit for a minute to brown. Then, break it up, combining with the veggies until it’s all brown.
  • Add the garlic, liquid smoke and tomato paste. Mix in and cook for one minute.
  • Stir in the remaining ingredients (Dijon mustard, chili powder, paprika, vinegar, tomato sauce, brown sugar, and red pepper flakes). Reduce heat to low, and let it simmer for 10 minutes.
  • Serve on toasted hamburger buns with fresh jalapeños. Add cabbage or slaw for more of a crunch.
