I LOVE charcuterie however it can be LOADED with just carbs and fat so here is my take on this yummy offering.
Load your board up with uncured ham turkey or roast beef instead of pepperoni or salami which is way higher fat and lower protein.
Add in all the veggies!
Load up on Lots of fresh fruit which is higher in fiber and lower in sugar than dried fruit or jams.
Toss in those whole grain crunchy crackers.
Laughing cow cheese is a great option for that richness that cheese adds without all the calories.
Sprinkle in nuts sparingly as a little goes a long ways but they can be a great addition too.
Go all in with some hard boiled eggs or deviled eggs. A great protein source here.
And last but not least – share this treat with friends and family. Take what you want to enjoy and move it off the tray to a plate for you. Be intentional with what you take and listen to your body and hunger / satiety cues.
Eat slowly.
